Smothered Pork Chops (Crockpot)

I love a good crockpot dinner - this is a really quick cooking one (I usually go for 9 hour cooking times), and was great for a busy weekend day.  I spent the entire day getting things done, knowing that by the time dinner time rolled around, I had it covered.  This has a lot of flavor, and couldn't be easier.  We really enjoyed it, and will probably double next time for leftovers!

SMOTHERED PORK CHOPS (CROCKPOT)

INGREDIENTS:
  • ¾ cup all-purpose flour
  • ½ teaspoon mustard powder
  • 1 teaspoon garlic pepper blend
  • ¼ teaspoon seasoned salt
  • 1 large onion, sliced
  • 4 boneless pork loin chops (½-inch thick, 4 ounces each)
  • 2 tablespoons vegetable oil
  • 1 (14½ ounce) can chicken broth

 DIRECTIONS:
  1. In a large ziplock bag, combine flour, mustard, pepper blend and seasoned salt.
  2. Add chops, one at a time, and shake to coat. In a large skillet, brown meat in oil on each side. 
  3. Transfer to a greased 5 quart slow cooker, add onions. 
  4. Place leftover flour from the ziplock in a small bowl; whisk in broth until smooth. Pour over chops. 
  5. Cover and cook on low for 3 to 3½ hours or until meat is tender. (In my crockpot - 3 hours was plenty).
  6. Remove pork to a serving plate and keep warm. Whisk pan juices until smooth; serve with pork.
